Grilling the perfect steak is not always easy. There are so many factors that you need to tak into consideration in order to get the most flavor out of your steak. In this article I will go over some of the things you can do that can help you grill the perfect steak.

Selecting The Right Cut Of Meat

Probably the most important thing you need to think about when trying to grill the perfect steak, is what cut of meat you will use. Now, different cuts will taste different and come out different, but usually prime and choice cuts come out really good. They are more expensive, but they have a lot more marbling in them which helps give the steak a really great flavor.

Choice cuts are probably the most popular among grillers, and it usually has a good amount of marbling in it so it will come out god if you grill it right. Choice also comes from young cattle and is nice and tender so when shopping for a good grade of meat, choice is a good choice! (sorry couldn’t resist! :lol: )

While there are many ways to prepare a steak, I find that brushing it with olive oil, sprinkling it with a coarse salt and some pepper, and letting it sit for about 20 minutes makes it come out really good. Some people will say that salt draws the moisture out of the meat, and I agree it does, but by letting it sit for about 20 minutes, the salt dissolves into the moisture that it pulled out.

When you throw the steak on a nice hot grill, the moisture that has been drawn out will mix with the salt and heat and you will end up with a delicious crust on the outside of your steak. This is probably the best way I have ever seen to do it and it usually helps it come out really good. The olive oil helps prevent the steak from sticking to the grill grates which can cause all kinds of problems if you are not careful.

When you are grilling the perfect steak, you want it to come out nice and juicy on the inside right? Well if you have ever grilled steak before, you know it does not always work like that. So how do you deal with that so it cooks thoroughly? I have found that if you let it sit out at room temperature for about half an hour or so before you put it on the grill, it helps the steak cook evenly and thoroughly because the center is not as cold as it would be if you were to take it out of the fridge and through it directly on the grill.

This is because the temperature needs to be hot (like 500 degrees hot) and if you leave the steak on the heat for just a minute to long, you will end up with a piece of “shoe leather” so to speak.

The best way to avoid this is to watch your food and set a timer so you know about when it will be ready. Most steaks require only about 5 or 6 minutes over direct heat, but you will have to judge for yourself how much time your steak will need.

The best way to do that is to “test” it by how it looks on the outside. Many people will cut open the steak to see if it is done, but I have found that just lets the juices out and dries out the steak even more. A good way to test the steak to see if it is done is to use an instant-read thermometer. This will tell you exactly how well done the steak is and you usually want it to be about 165 degrees for medium done steaks.

Another way that you can test the steak is to push on it with your fingers. Since meat gets firmer as it cooks, you can judge its doneness by how firm it is. This takes a little practice, but it is one of the best ways to check for doneness without cutting it open or poking a hole in it with a thermometer.

Generally a steak will reach its desired doneness in about 5 to 6 minutes per side, so if you set a timer for about that long, you can usually judge for yourself if it is ready. You can always put the steak back on the grill if it is not ready yet, but if it is overdone you are pretty much out of luck, so it is important to keep a close eye on it.

After you have decided it is done, let it sit on the plate for about 5 minutes before you devour it.
